Peter Gott of Sillfield Farm in Cumbria and host to the youngsters of Jamie Oliver's 15 restaurant, presented the video that was commissioned by Clarence House.

His Royal Highness the Prince of Wales identified a lack of young people going into the butchery trade and with a growing demand for high quality cuts of meat and skilled butchers. There is a gap to be addressed in providing skilled young people for these roles.

The Prince's Trust and Duchy Originals had been tasked with developing a programme to offer unemployed young people a taste of the industry and opportunities to gain skills and experience to be able to move into this area of work.

The Trust ran a 'Becoming a Butcher' 3-day course for young people aged 16-20 that were interested in a career in Butchery. Training was provided by Peter Gott, who keeps free range Wild Boar and rare breed pigs, and also produces a range of products including cured meats, air-dried hams and bacons, sausages and pies. Sillfield Farm has a permanent site at London's well-known Borough Market.
